4 Recipes Using A Vegan Egg Substitute
Being vegan doesn’t mean you have to give up the best sweet treats, and there are plenty of amazing recipes you can make with a vegan egg substitute. There are plenty of available substitutes, including bananas, flax seeds and even sweet potatoes.
Banana Protein Pancakes
You will need:
1 banana (which will act as the vegan egg substitute)
¾ cup plant-based milk
1 tsp maple syrup
1 tsp coconut oil
1 ½ tsp baking powder
1 cup flour
1 scoop protein powder
¼ cup chocolate chips (optional)
Mash the banana and mix with the milk, maple syrup and coconut oil. Combine the dry ingredients (baking powder, flour and protein powder) then mix in with the wet ingredients. Add in the chocolate chips (if you are using them) and then ladle the pancake batter into a preheated pan until cooked.
Cinnamon Rolls
You will need:
2 cups bread flour (gluten free if necessary)
1 tsp baking powder
1 tsp baking soda
4 tbsp coconut sugar
4 tbsp coconut oil
3 tbsp plant-based milk
½ cup sweet potato puree (which will act as the vegan egg substitute)
1 tsp apple cider vinegar
Cinnamon filling:
4 tsp cinnamon
4 tbsp coconut sugar
4 tbsp coconut oil
Preheat your oven to 180 degrees. Combine the dry ingredients (flour, baking powder, baking soda and coconut sugar) into a bowl, then add in the sweet potato, coconut oil, milk and vinegar and need until it’s a dough. Roll out the dough to around 1 ½cm thick, then mix together the cinnamon filling and spread it evenly over the dough before rolling and cutting into even rolls. Bake for 10-12 minutes and enjoy.
Oatmeal Chocolate Chip Cookies
You will need:
1 cup oats
1 cup flour
½ tsp baking soda
½ tsp baking powder
1/3 cup coconut oil
¼ cup coconut sugar
¼ cup maple syrup
1 tsp vanilla extract
2 flax eggs (this is a common vegan egg substitute – mix together 2 tbsp flax seeds with 5 tbsp of water and leave for 15 mins)
¾ cup chocolate chips
Preheat your oven to 180 degrees. Create your flax eggs and leave to set. Combine the dry ingredients (oats, flour, baking soda, baking powder), then separately combine the wet ingredients (coconut oil, coconut sugar, maple syrup, flax eggs and vanilla extract). Mix the two together until thoroughly combined, then mix in your chocolate chips and add some more oats if necessary. Make even balls of cookie dough and place on a baking sheet before flattening them out. Bake for around 10 minutes (Until golden) and leave to cool before eating.
Vegan Banana Waffles
You will need:
2 flax eggs (this vegan egg substitute is made in the same way as the above recipe)
2 bananas
1 ½ cups flour
½ cup ground oats (you can do this in a food processor)
1 tbsp sugar
3 tsp baking powder
½ tsp cinnamon
1 ½ cups plant-based milk
3 tbsp vegan butter
1 tsp vanilla extract
Create your flax eggs and leave to set, meanwhile puree or mash the bananas. Combine the dry ingredients (flour, ground oats, sugar, baking powder and cinnamon), and separately combine the wet ingredients (plant-based milk, vegan butter and vanilla extract. Combine the two before adding the flax eggs and bananas, then stir until fully combined. Heat a waffle iron and use coconut oil to prevent the waffles from sticking. Fill the grid and cook each waffle for around 6 minutes, then top with extra banana and/or maple syrup and enjoy.
