Non-Dairy Vegan Protein Powder Ice Cream Recipes
One of the best things as a vegan is finding ways to eat your former favourite (pre-vegan) foods. For me this moment came when I found ways to make ice cream which is healthy, packed with protein, and costs hardly anything. These are four of my favourite non-dairy protein powder ice cream recipes.
Creamy Vanilla
This is my favourite to have on top of pancakes (like these ones). You will need:
2 cans coconut milk (full fat)
4 scoops vanilla non dairy protein powder
1 tsp vanilla extract
1 tbsp sweetener (optional)
Chill a loaf pan in the freezer. Blend together all of the ingredients until the texture is thick and creamy. Mix your ice cream in the freezer every 20 minutes for the first hour so that the ice crystals aren’t too big. When serving, leave to thaw until the ice cream is at the texture you’d like it to be.
Peanut Butter Chocolate
The best thing about this ice cream is that it is ready to serve, so you don’t need to wait for it to freeze before eating. You will need:
2 frozen bananas (chopped)
2 ½ tbsp Peanut butter
1 tsp Cocoa powder
1 scoop chocolate non dairy protein powder
Chocolate chips (optional)
Blend the frozen bananas until they are smooth (adding some plant-based milk can help to make them blend faster). Add the peanut butter and blend again, followed by the cocoa and chocolate dairy-free protein powder. Add in the chocolate chips and stir to ensure they are evenly distributed.
Cinnamon Swirl
This might be the best comfort food we have found. You will need:
2 cans coconut milk (full fat)
1 cup maple syrup
1 tbsp cinnamon
2 scoops vanilla non dairy protein powder
2 tsp vanilla extract
Blend together all of the ingredients until the mixture is smooth. Pour mixture into a loaf tin which has been in the freezer until cold. Freeze for at least two hours, mixing every 20 minutes or so for the first hour in order to ensure that the ice crystals don’t get too big.
Mint Choc Chip
Pre-veganism this was my favourite flavour of ice cream, and the most refreshing thing I can think of in the summer. Thankfully, the vegan version is just as good. You will need:
2 cans coconut milk (full fat)
12 mint Oreos
2 tsp vanilla extract
2 scoops chocolate non dairy protein powder
Mix together everything but the Oreos in a blender until the mixture is smooth. Crush up Oreos separately and mix into the ice cream. Pour the mixture into a cold loaf tin and freeze, mixing every 20 minutes for the first hour.
If you aren’t a fan of mint choc chip, but want a cookies and cream ice cream then you can replace the mint Oreos for regular ones, and choose between either chocolate or vanilla protein powder.
