Plant-Based Protein Powder Bars

Vegan protein bars can be pretty nasty – they have a funny taste and a funny texture.  So, we decided to find and make the best plant-based protein powder bars we could, and the results were amazing.

 

Chocolate almond bars –

For 4 bars, you will need:

¼ cup chocolate vegan protein powder

1 tbsp ground almonds

2 tbsp coconut sugar or sweetener

2 tbsp cacao powder

4 tbsp almond milk

60g dark chocolate

4 tbsp almond flakes

 

All you need to do is combine the protein powder, ground almonds, coconut sugar/sweetener, cacao powder and almond milk in a bowl until you have a smooth batter.  Then, separate our the batter into either bars or balls (for little protein truffles).  Melt the dark chocolate and coat the bars, then sprinkle over the almond flakes.  Leave to cool until they are firm and then enjoy!

 

Cookie dough bars –

For 4 bars, you will need:

¼ cup ground oats

4 tbsp vanilla vegan protein powder

2 tbsp coconut flour

4 tbsp nut butter (we used cashew)

2 tbsp maple syrup

Cinnamon to taste

60g dark chocolate (cut into pieces)

 

This is the easiest recipe ever – literally all you have to do is combine the ingredients into a batter and shape into bars (or, like in the last recipe, balls).  If the mixture is too wet, add some more coconut flour; if it is too dry, add a splash of plant-based milk.  Leave to cool until they are firm, and drizzle over some extra dark chocolate if you fancy it.

 

Banana bread bars –

You will need:

2 cups oat flour (you can just blend oats to make this)

½ cup coconut flour

½ cup vanilla vegan protein powder

2 tbsp sweetener

1 tbsp cinnamon

¼ cup nut butter

½ cup maple syrup

1 small banana, mashed

 

Mix together the flour, protein powder, sweetener and cinnamon in one bowl, and the nut butter and maple syrup in a separate, microwave-safe bowl.  Heat the nut butter and maple syrup until melted, then combine with the dry ingredients, add the banana and mix well.  If the mixture is too dry, then add a little bit of plant-based milk until you have a firm batter.  Transfer to a lined baking dish and chill for at least 30 minutes, then cut into bars.
